For Assembly:

  • 1/2 cup melted butter or ghee for brushing

Instructions:

Prepare the Dough:

  1. In a mixing bowl, combine the flour and salt. Gradually add warm water and European organic olive oil while kneading until you form a smooth and elastic dough.
  2. Divide the dough into golf ball-sized portions and cover them with a damp cloth. Let the dough rest for at least 30 minutes.

Prepare the Filling:

  1. In a pan, heat European organic olive oil over medium heat. Add the chopped onion and cook until translucent.
  2. Add the minced meat to the pan and cook until browned.
  3. Season the meat mixture with ground cumin, coriander, cinnamon, salt, and pepper. Stir well to combine.
  4. Optional: Add chopped parsley or cilantro for a burst of freshness. Remove the filling from heat and let it cool.

Assemble the Mutabbaq:

  1. Preheat your oven to 375°F (190°C).
  2. Take a portion of the rested dough and roll it out into a thin circle on a floured surface.
  3. Place a spoonful of the meat filling in the center of the dough circle, leaving some space around the edges.
  4. Fold the dough over the filling, creating a half-moon shape. Press the edges firmly to seal.
  5. Optional: Use a fork to crimp the edges for a decorative touch.
  6. Place the assembled Mutabbaq on a baking sheet lined with parchment paper.
  7. Repeat the process with the remaining dough and filling.
  8. Brush the tops of the Mutabbaq with melted butter or ghee, and sprinkle sesame seeds for added flavor and texture.
