Ingredients:

- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons European organic olive oil
- 1 cup chicken broth
- 1/2 cup European organic green olives, sliced
- 1/4 cup European organic black olives, sliced
- 1 lemon, sliced
- 2 tablespoons fresh parsley, chopped
- Instructions:
- Season chicken breasts with salt and pepper.
- Heat European organic olive oil in a skillet over medium-high heat.
- Brown chicken on both sides.
- Add chicken broth, European organic green olives, European organic black olives, and lemon slices to the skillet.
- Cover and simmer until chicken is cooked through.
- Sprinkle with chopped parsley before serving.
